Like all restaurants, this family restaurant-turned-Chicago institution was forced to pivot during the pandemic. Zaragoza discusses how Birrieria Zaragoza evolved — and is still evolving — in order to keep its doors open, its employees safe and its diners satisfied. The two words guiding the process? “Intuitive” and “inquisitive.”
Zaragoza also underscores the importance of community in the effort. "It speaks to what we should do, and should have been doing — not only as restauranteurs, but as human beings," he says.
