Rare Remarks: A Conversation with Chef Jonathan Zaragoza, Part One

Vulcan’s Rare Remarks series uncovers real perspectives on how COVID-19 has impacted the foodservice industry. We are talking to dealers, reps, chefs, operators and manufacturers to get their views on the state of the industry, how they’ve coped throughout the pandemic and getting back to “business as usual.”

In this episode of Rare Remarks, Vulcan Digital Marketing Manager Ann Holtzapple sits down with executive chef Jonathan Zaragoza of one-dish concept restaurant Birrieria Zaragoza. Like all restaurants, this family restaurant-turned-Chicago institution was forced to pivot during the pandemic. Zaragoza discusses how Birrieria Zaragoza  evolved — and is still evolving — in order to keep its doors open, its employees safe and its diners satisfied. The two words guiding the process? “Intuitive” and “inquisitive.”

Zaragoza also underscores the importance of community in the effort. "It speaks to what we should do, and should have been doing — not only as restauranteurs, but as human beings," he says.
