Cut Cook Times in Half with the Vulcan Clamshell

Clamshells are popular griddle accessories in a busy restaurant. When mounted to a griddle, clamshells enable cooking from above and below the food product, making them the embodiment of the “do more with less” ethos. However, not all clamshells are created equal.
